"A dream between heaven and earth, inspired by time."
Our inspiration comes from our Patriarch, an olive tree dating back to 1640, which reminds us every day of the importance of resilience, authentic quality, and respect for the slow rhythms of nature.
That's why we produce our oils in the healthiest and most respectful way possible: we want Mantenera to be a tangible example of research, quality, and profound authenticity.

The Heart of Flavor: A Blend of Character
Discover the unique harmony of our Organic EVO Oil Mantenera, a signature blend of the highest quality born from the expert combination of three noble Italian varieties: Majatica, Coratina, and Leccino.
The olives are harvested exclusively by hand at the beginning of veraison (first-second decade of October). This early harvest is the secret to obtaining an Italian Extra Virgin Olive Oil with an unsurpassed sensory and nutritional profile:
Sensory Profile: An intense and vibrant Green Fruity, enriched with unmistakable notes of Fresh Almond.
Health Benefits: Exceptionally high levels of Polyphenols (890 mg/kg), powerful natural antioxidants, and an exceptionally low acidity (0.12%), which guarantee a product of the highest quality every year. Choosing Mantenera means choosing an oil with high polyphenols.
Artisanal Processing and Attention to Detail
After extraction, the oil is immediately filtered to preserve its freshness. It is then stored in modern stainless steel silos at controlled temperature. A period of decanting and refining allows aromas and flavors to blend, creating our inimitable Mantenera Blend. The final bottling takes place in strict compliance with hygiene and health regulations and the HACCP protocol.
