Our extra virgin olive oil is divided into two labels, Mantenera Organic Blend of three Cultivars Majatica Coratina and Leccino and Mantenera Secolare produced by our oldest olive trees with very high value in terms of biodiversity and landscape conservation thanks to the preservation and rehabilitation of autochthonous Cultivars which has obtained the prestigious recognition of Slow Food Presidium.

 

The Organic Blend produced and selected by us is an oil with well-defined organoleptic properties and characteristics such as: grassy, almond and artichoke notes, with a full taste, green fruity with a moderately intense bitterness and spiciness.

The "Secolare" has herbaceous sensory characteristics with hints of lemon leaf, harmonious presence of light to medium bitterness and spiciness. It has been granted the Slow Food Presidium "Ancient Olive Trees". The Slow Food Presidium of ancient olive trees promotes the environmental, landscape, health and economic value of ancient olive groves with autochthonous cultivars and groups producers who do not use synthetic fertilizers and chemical herbicides.

 

The yield of our olives is around 15-17% due to the high content of polyphenols averaging 897/527 mg/kg and very low acidity content of about 0.1-0.3%.

 

Harvesting directly from the tree is the first anchor point of our production process, the olives must not fall to the ground. Once harvested, they are transported in ventilated crates to the mill a few kilometers away from the harvesting fields, allowing milling within 8 hours.

 

The milling takes place through mechanical pressing with cold extraction in a two-phase mill without the addition of water.

 

The extraction of the oil involves various stages of the process: Washing Crushing Malaxation Centrifugation Extraction and Filtration with cardboard to eliminate any processing residues and stabilize quality in the long term.

 

Storage in air-conditioned and temperature-controlled environments allows the product to settle before bottling. These are the secrets that make our oil a unique experience.
